Why Grouper

Grouper is one of the most forgiving fish to cook at home. Its dense, snow-white flesh keeps its shape through steaming, poaching, pan-frying or baking, and it stays moist even if you are a little heavy-handed with the heat.

Served whole and gently steamed, it needs very little: a scatter of finely sliced ginger, a handful of spring onion and a drizzle of hot oil is enough to turn it into the centrepiece of the table.
